Grilled Summer Squash Stacks with Herbed Ricotta

grilled supper squash
Creamy herbed-ricotta is layered between slices of grilled veggies in this summery side. A fresh tomato salsa makes a terrific topping.

3/4 cup(s) part-skim ricotta cheese
 2 Tbsp uncooked scallion(s), minced
2 Tbsp basil, minced
1 tsp lemon zest
1/2 tsp minced garlic
1/8 tsp black pepper, or to taste
1/8 tsp crushed red pepper flakes, or to taste

Tomato Salsa
 2 medium plum tomato(es), chopped
 1 Tbsp uncooked scallion(s), minced
2 tsp basil, minced
1/4 tsp balsamic vinegar, or to taste
1/8 tsp kosher salt, or to taste

Remaining Ingredients
 1 large yellow summer squash
 1 large uncooked zucchini
4 spray(s) cooking spray
3/4 tsp kosher salt

Instructions
In a medium bowl, to make ricotta filling, combine ricotta cheese, scallion, basil, lemon zest, garlic, black pepper and red pepper flakes; refrigerate until ready to use.

In a small bowl, to make tomato salsa, combine tomatoes, scallion, basil, vinegar and salt; set aside at room temperature.

Slice squash and zucchini crosswise into eight 1/4-inch-thick slices each; place in a third bowl, coat with cooking spray and toss with remaining 3/4 teaspoon salt.

Off heat, coat a grill or grill pan with cooking spray; heat to medium-high heat. Grill squash and zucchini, until softened and grill marks appear, about 8 to 10 minutes; let cool to room temperature.

To assemble stacks, spread 4 squash slices with 1 1/2 teaspoons ricotta mixture each; top each with a zucchini slice and spread with 1 1/2 teaspoons more ricotta mixture. Repeat with remaining ingredients to form 2 layers; garnish each stack with 2 tablespoons tomato mixture and serve immediately. Yields 1 stack per serving.

How to Remove Acne - Home Remedies for pimples

25+ Blemish Busters You Can Make Yourself

Quite a list of remedies here folks! These can be used for banishing a single pimple or two, acne, recipes for maintaining clear skin and I’ve also listed some tips at the bottom of the page to help with rosacea and a blackhead recipe.
Ingredients

Note: If acne seems to worsen at the beginning, keep in mind that the treatments are drawing out impurities and this could be the cause. Steady applications should show improvement over time. Also results will vary so if one doesn’t do the trick, try another until finding one that works.
Directions: Pick a remedy below then apply directly to blemish or whole face then let dry for at least 20 to 30 minutes before washing off (unless otherwise noted).
Keep ingredients away from eyes. If allergic to any of the items, do not use topically since they may still trigger a reaction.
  • Aloe vera: Fresh aloe vera gel, allow to dry before washing off.
  • Alum: (paste) 1/2 tsp alum with 1 TBS warm water.
  • Apple cider vinegar: Recommended for acne, wipe vinegar over face with a cotton ball. May sting a bit and may smell, but stick with it if possible. If it’s just a pimple or two that’s causing grief, a q-tip does the trick.
  • Aspirin mask: This one’s from Dr. Oz…Crush 6-12 non-coated aspirins into a powder then mix with freshly squeezed lemon juice. Soak for 5 to 10 minutes until the it dissolves into a paste then apply to breakout. Remove with baking soda and water. Why it works? Aspirin contains salicylic acid which acts as a chemical peel and lemon juice contains vitamin C. Source: doctoroz.com. Not recommended for those who suffer from rosacea since the salicylic acid could aggravate it.
  • Banana: (Mashed) Leave on for a couple hours (if possible).
  • Calamine lotion: Leave on overnight.
  • Cinnamon & honey: Good for acne, combine cinnamon powder and honey into a paste. Allow to set for at least an hour before removing. Recommended to do daily.
  • Cucumber mash: Peel then puree in a blender, apply then keep on for at least an hour. Good for acne.
  • Fuller’s earth: (paste) Freshly squeezed orange juice with Fuller’s earth. Allow to dry for 20 to 25 minutes. Can use grated orange peel instead (dried).
  • Honey: Dab with pure honey, allow to dry then wash off or mix 50/50 honey and freshly squeezed orange juice. You may find it beneficial to apply a hot compress first.
  • Milk of Magnesia: (acne) Leave on overnight.
  • Neem: Pour 2 cups of boiling water over a handful of neem leaves. Cover and steep for about 10 minutes then strain. Allow to cool then add Fuller’s earth to make a paste.
  • Olive oil: (for acne and breakouts) After cleaning with a mild soap, apply a light layer of extra-virgin olive oil three times a day (do not wash off). An oily substance may seem contrary to logic (clogs pores) but this seems to both heal and draw out impurities. More breakouts may occur at first but after a few days this will settle down.
  • Orange rinds: Combine equal parts grated orange rind (dried), plain yogurt and rosewater. A paste can also be made with ground peels (dried) and milk (keep on for about an hour).
  • Pineapple juice
  • Sandalwood: (thick paste) Equal parts sandalwood powder, turmeric powder and milk. Leave on overnight.
  • Tea tree: Dab directly onto trouble spot with a q-tip.
  • Toothpaste: (not gel) Just a dab will do ya, leave on overnight.
  • Turmeric: (paste) Combine with a bit of milk or plain yogurt. Another option: mix 1/2 tsp turmeric with a bit of water (4 times per day).
  • Witch hazel: Dab directly on pimple 4 or 5 times per day.
Clear Skin Helpers:
  • Buttermilk: Use each day as needed to help clear acne.
  • Coconut Oil: A thin layer (daily) to help fade scars.
  • Cold brewed tea: Wash daily with this.
  • Grapefruit Seed Extract: Add a few drops to a mild liquid facial soap wash skin daily with this. Tea tree can also be used in the same way.
  • Strawberry leaf infusion: Wash skin with this twice a day, morning and night (1/4 cup strawberry leaves and 1 1/2 cups boiling water, cover and steep for 2 hours then strain and chill before using).
  • Tea Tree: Add 10 drops to 1 cup of lukewarm water then wash face with mixture (avoiding eyes).
Rosacea:
Do consistent, daily treatments for at least two weeks before determining if results are satisfactory or not.
  • Apple Cider Vinegar: Clean with a gentle soap, rinse well, pat dry then wipe with a cloth dipped in apple cider vinegar (once per day).
  • Chamomile Infusion: Pour 1 cup boiling water over 2 tsp dried chamomile flowers, cover then steep for 10 minutes. Strain, cool and then apply as a lukewarm compress.
  • Flaxseed Oil: Consume 1 tsp three times daily or try making a scrub with ground oatmeal (uncooked) and flaxseed oil then gently exfoliate.
  • Green Tea: Drink at least 2 cups a day and wash with it daily (cool after brewing).
  • Lavender Infusion: Same as the chamomile infusion above but using dried lavender buds instead.
  • Rose Water: Wash daily with this. One recipe to try: For every 1 firmly packed cup of petals, pour 2 cups boiling water over top. Cover and steep until the liquid is cool. Strain, squeeze out the liquid from the petals, and refrigerate in a sterilized jar.
Blackheads:
Try a facial steam bath first (instructions below) then the recipe, this will open up the pores as well as soften up the blackheads for easier removal.
1 TBS Unflavored gelatin
1 1/2 TBS Milk
  • Combine the gelatin and milk then heat in the microwave for about 12 seconds. Remove from microwave and stir with a wooden stir stick (a clean one!). Generously slather on problem areas. Be careful not to get too close to the eyes.
  • Let completely dry (between 15 to 30 minutes) then carefully peel it off. The gunk clogging pores will be stuck on it, the result is similar to the expensive removal strips found in stores.
  • After removing, splash face with very cold water to close the pores.
Steam Bath:
First use a cleansing soap. Then fill a bowl with boiling water and place your face down close to the surface to be near the heat. Cover head with a towel to trap the steam, stay put for about 10 minutes then use the peel above.
  • Optional: Add tea bags or Epsom salt or dried lavender to the boiling water.

Homemade Hair Masks & Conditioning Wraps

If hair is dry or damaged, here are a few recipes to try that will both nourish and bring it to a healthy shine.
Bowls
These are made with natural ingredients and most are likely in your pantry already.
The hot oil remedies at the bottom of the page work best if a warmed towel is wrapped around the head after treatment is applied, here’s how to prepare them:

  • Lightly spray both sides of a towel with water then fold and arrange them in a large paper bag (or roll in aluminum foil).
  • Place bag (closed) on a baking sheet then put in the oven on the middle rack.
  • Turn off heat and they should be ready to use in about 10 minutes or so.
  • Crockpot Method: Generously mist them with water, roll up then arrange in a pre-heated crockpot (medium temperature). Cover and leave for about 20 mins, reducing to low after 10.
Use them only when they’re cool enough to handle.

  • “EO” is short for Essential Oil

Make Your Own Hair Remover

Centuries ago in ancient Egypt, Cleopatra and her handmaidens discovered a secret beauty treatment that magically and painlessly got rid of unwanted hair…and this recipe was lost for years until recently discovered. At least that’s what the television infomercial declared years ago when I first became aware of body sugaring.

I pulled out my credit card, ordered my tub, gave it a try and found that a) it wasn’t painless like the infomercial stated and b) it was pretty pricey considering I could go to the salon and have a professional take care of the mess for just a few bucks more. I never placed another order.

Over the years I’ve discovered a few homemade versions that do just as good a job as that pricey tub cost me, and they cost only pennies to make! Now we’re talking ;).

If you’re wondering what this is, it’s epilation that’s very similar to waxing, a sugary mixture is heated then cooled and applied to the area of the body that you want to get rid of hair. Strips of fabric are pressed over top then ripped off. If it works, the fabric is now covered with hair. If it doesn’t completely get it all, just reapply and rip again.

Since the paste can grab and pull the hair out deep at its roots, the new growth is slower to appear than if shaved (which just removes growth at the surface). Skin is left soft and smooth and there’s not much mess (especially when compared to waxing) since the mixture is water soluble and washes off easily.

If you’d like to give this a try, here are three different ways to make it plus directions for application (and ripping). Good luck!

Supplies Needed:
Candy thermometer (to measure temperature while mixture is heating)
1″ strips of cotton fabric (about 8″ to 10″ in length)
Wooden popsicle sticks or spatula

Before getting started: Wash well with soap and water, removing all traces of oil, makeup, deodorant and dirt. Pat dry.

Ingredients: (Two different recipes, choose one)
#1: 2 cups sugar, 1/4 cup lemon juice (freshly squeezed), 1/4 cup water
#2: 1 cup sugar, 1 cup honey, juice from one half lemon (freshly squeezed)

Heating Directions:
Combine ingredients in a heavy saucepan and turn on the heat to medium. Once it starts boiling, reduce heat to low and cook until the mixture reaches 250°F (stir often so it doesn’t boil over) then take off heat. If a thicker paste is preferred, just heat to 245°F.
Let it sit until it’s warm then pour into a glass canning jar. Continue to let it cool till it’s at room temperature. Careful! This will cause serious burns if it’s not cooled down properly before applying.

Microwave Version:
1 cup sugar, 1/4 cup honey, juice from one half lemon (freshly squeezed)
Directions: Combine items in a large glass bowl then heat in the microwave for two minutes, stopping every 20 to 30 seconds to stir. Once it’s finished cooking, allow to cool down a bit before pouring into a glass canning jar and letting it rest till it’s at room temperature. Source: cbc.ca.

How To Apply:
Lightly dust the surface with cornstarch and rub it in. Lightly is key, this will help protect the skin a bit so the paste doesn’t stick to it as much (helping lessen the pain).
Using the popsicle sticks, slather on a thin layer in the direction of the growth then cover with cotton strips (do in batches of 3 or 4 until the entire area is covered). Rub the fabric a few times firmly (in the direction of the growth).
Let it sit for about a minute then pull skin tight with one hand and rip each strip off quickly with the other (in the opposite direction of the growth). Reapply as needed (can reheat if it gets too cool).

That’s it! Does it hurt? Yes, I think it does but I’m a bit of a wimp ;). Over time with more treatments you do get de-sensitized to it a bit.

Tips:
Hair should be at least 1/4″ so the mix/paste has something to really grab onto.
Hand wash the strips in warm soapy water, dry and reuse them again and again. Muslin or diaper flannel work well.
Careful to avoid growths such as skin tags, warts and moles. Also avoid applying on top of stretch marks, abrasions, scrapes or cuts, scar tissue, delicate area around the eyes, rashes and varicose veins.
Seal any leftovers in the jar and refrigerate to use later (simply reheat).
If paste is too hard to work with, add a spoonful of water and reheat in the microwave for a minute or so until it’s hot. Stir then allow to cool as above.

    7 FAT FLUSHING DRINK RECIPES

1)Red, White, and Blueberry Lemonade Ingredients 1 can frozen white grape juice concentrate, organic preferred 1 cup freshly squeezed lemon juice 1 gallon cold water, or water and ice 2 apples, cut across into round slices 1 pint blueberries, washed 1 pint strawberries, stems removed and halved Directions Combine the grape juice concentrate, lemon juice, and water. If you have a star shaped cookie cutter, use it to cut shapes out of the apples. Otherwise cut the sliced apple rounds into halves and add. Add all of the fruit into the lemonade. Serve with a ladle as you would a punch.

2)Strawberry-Basil Water This is another drink option combining high-fiber strawberries which are low on the glycemic index with vitamin C-rich lemon juice. This recipe also calls for basil, which adds a fresh, herbaceous pop to the water. Basil has anti-inflammatory properties and antioxidants to protect your cells. Ingredients 1 pint strawberries, sliced 10 fresh basil leaves, torn 1 lemon, sliced 2 quarts water Directions Combine strawberries, basil and lemon in a large pitcher. Add 2 quarts water. Refrigerate at least 3 hours or up to 2 days. Infused waters are an easy way to add flavor and interest without a lot of extra calories. Try different fruit and herb combinations, like cucumber-mint or lemon-lime.

    3. The New Southern Style Sweet Tea Combining lime or lemon juice with fiber-rich raspberries or blueberries, this healthy version of sweet tea gives you options. It also calls for green tea, which stimulates the nervous system to burn more calories (along with delivering a hearty dose of antioxidants), and mint, which is both immensely refreshing and high in vitamin C.

    Ingredients
1/2 gallon (8 cups) chilled water
    6 (small) green tea bags
    1/2 cup agave
    1 lime or lemon, sliced
1/2 cup fresh raspberries (blueberries are also yummy)
8 fresh mint leaves, (add to pitcher or individual glasses)

    Directions

In a small saucepan over medium-high heat, bring 2 cups water to the point of steaming, remove from heat and add tea bags. Allow tea bags to steep for 8 minutes.

Remove and discard tea bags, add agave, stir to combine. Add 6 cups chilled water to a half gallon pitcher, next add the tea and stir. Add sliced limes or lemons along with raspberries and fresh mint leaves. Sever over ice and enjoy!

Note: Never boil tea bags as it makes the tea bitter. You may steep tea up to 12 minutes in steaming water as this allows more antioxidants to be released but will also make the tea stronger.

    4. Lemon Ginger Detox Drink Ginger opens blood vessels, reduces inflammation, relieves nausea, and increases metabolism. It can help not only with burning fat, but with combatting the symptoms of spring and summer allergies. This spicy drink will keep you feeling lively all day.

    Ingredients
1 12-ounce glass water, at room temperature
    Juice of 1/2 lemon
1/2 inch knob of ginger root

    Directions

Add the lemon juice to the glass of water. Finely grate the ginger by using a zester, add to the glass of water. This drink is a perfect way to start your day!

    5. Orange-Pomegranate Green Tea You’d be hard-pressed to find a drink recipe that packs in more fat-melting vitamin C than this recipe, which combines orange juice and pomegranate juice. Pomegranate is also a low-glycemic fruit. Add in green tea, and you’ve got a mean fat-burning beverage with a very nice taste.

    Ingredients
    • 1/3 cup chilled green tea, no added sweeteners (home brewed is best)
    • 1/2 cup freshly squeezed orange juice (O.J. in a carton will work if fresh oranges aren't available)
    • 1/2 cup 100% pure pomegranate juice
    • 1 lemon wedge
    • 1 orange slice, garnish
    • ice
    Directions

Combine chilled tea and pomegranate juice in one glass, add a few cubes ice and pour in orange juice. Squeeze lemon into drink. This drink is especially pretty if you do not stir when pouring the orange juice. Add an orange slice to the side of the glass for garnish and pop in a straw!
This is a perfect dinner drink and a great replacement for sodas.
Note: To make this recipe for several, add to a half gallon pitcher:
2 cups chilled green tea, no added sweeteners (home brewed)
3 cups 100% pure pomegranate juice
3 cups freshly squeezed orange juice
6 orange or lemon slices, or 3 of each

    6. Strawberry Lemonade Want to keep it simple? Strawberry, lemon, water, and a natural sweetener. That’s it! (Note: This recipe calls for agave, a sweetener that, like all sweeteners, should be used in moderation. Though it may have a low glycemic index, the syrup is high in fructose, which may be associated with weight gain. Also, it’s higher in calories than table sugar. Use lightly, or consider using honey instead, which has greater nutritional value.)

    Ingredients
    2 cups fresh strawberries
3/4 cup freshly squeezed lemon juice, about 5 lemons
    1/2 cup agave
    Chilled Water (we used distilled)
    1 extra lemon, thinly sliced

    Directions

Slice tops from strawberries, discard. Add strawberries, agave and lemon juice to a blender and pulse until strawberries are liquid. Strain juice through a sieve if you prefer most of the pulp be removed.

Pour juice into a 1/2 gallon pitcher, add slices of lemon, fill with chilled water. Don't over fill pitcher with water, add just enough to make 1/2 gallon. Pour over ice and enjoy!

Garnish sides of glasses with lemon slice and half of a strawberry. Also, try adding a few sliced strawberries to the pitcher. This is such a pretty drink!

    7. Mean Green Juice If you’re in the mood for something a little less sweet, try out this juice version of a green smoothie. Harnessing the fiber, vitamin and mineral content of kale and apples, the metabolism-boosting capacity of ginger, and celery, which takes more calories to chew than it provides, this green juice is great for weight management.
